National Discover Your Optimal Health Day Recap

My parent company, Take Shape For Life, declared Thursday, September 12, 2013, National Discover Your Optimal Health Day. They recognize that our nation is so disconnected as it pertains to health and wellness and wanted to bring people all over America together. Through this day-long celebration, we brought awareness to living a longer, healthier life, as well as childhood obesity with our walk across America.

I honored this day by hosting a Healthy Happy Hour in my parents home, bringing together friends, family, and others who were interested in adding health in their lived. I had so much fun preparing my 5 & 1 Buffet, that featured three delicious Medifast Meals, three options for our Lean & Green, and some tasty flavor infusers.

This is such an easy recipe to whip up! And it’s really great if you are going to a pot-luck and want to make sure you have healthy options to share. This recipe makes a lot of servings for a buffet and there was even a lot left over! Most of the prep time is spent putting everything on the tooth picks, but boy is it worth it!

Next time you are hosting brunch, why not serve these? I took our Zucchini Fritter recipe and baked it in mini muffin tins for a bit size mini quiche. I ended up baking them for about 25 minutes at 400 to get the right consistency. The recipe only calls for zucchini and onions, but feel free to mix up the veggies to add some color and texture to your batch! I love dicing up red peppers and mushrooms! Just make sure you measure everything out so that you are getting the right amount of carbs from your veggies!

By far the biggest hit of the night! So savory and so healthy! Everyone was excited at the thought of eating a cheese based dish while reaching their goal weight! My favorite thing about these bad boys is the cilantro on top! It really gives them a clean finish and brings the rosemary out! Another alternative to this dish is to mix in fresh crab meat! If you are making two servings, substitute 7oz of crab for 1 cup of the cheese and mix as instructed. NOTE: Do NOT use imitation crab!!! 1 – it’s fake food, and 2 – it has too many carbs if you are trying to reach a fat burn!
