- 1 Pepper (Large, top removed and hollowed)
- 5 oz Ground Beef (lean)
- 1⁄4 c Zucchini (cubed)
- 1⁄4 c Mushrooms (cubed)
- 1⁄4 c Tomato
- 1 T Onion (chopped)
Cut the top off your pepper and hollow it out. Put it in a deep stove top pan and fill the pan with water to cover the top of your pepper. Blanche the pepper and then remove from pot.
In a separate pan, sprayed with low-fat, non-stick spray, saute ground beef and veggies.
