Cauliflower Tacos

Makes 2 servings
Per serving
1 Lean protein
1 ½ vegetable servings
3 condiments

Taco Shell: (this can also be used for Pizza Crust)
1 cup Grated Raw Cauliflower
1/4 cup Egg Beaters
1/4 cup Mozzarella Cheese

Taco Filling:
10 ounces Lean ground beef or ground turkey
1tsp chili powder
1/2 tsp garlic powder

Topping:
1 cup Artisan Lettuce
¼ cup Mozzarella Cheese
3 tablespoons Salsa

Directions:
Grate cauliflower (food processor, blender, or bullet works great) add eggs and cheese and puree. Should be mashed potato consistency. Place parchment paper on cookie sheet and spray. Smooth cauliflower into 4 small circles. Bake in oven on 425 for 30 minutes, or broil for 5-10 (you really have to keep an eye on this).

Brown meat, add seasonings, assemble tacos with toppings and enjoy!!

TIP: I make my shells ahead of time on a weekend or when I have time and put in fridge. You can also make up a bunch of shells and freeze to enjoy later.
