Italian Chicken


  • 1⁄2 T Olive Oil
  • 2 clv Garlic (minced)
  • 2 Chicken (breast, boneless and skinless)
  • 2 T Rosemary (or Oregano, fresh)
  • 1⁄4 t Red Pepper (crushed)
  • 1⁄2 t Balsamic Vinegar
  • 1⁄4 t salt and pepper (to taste)


Preheat oven to 400 degrees.
Combine oil, garlic, rosemary and crushed red pepper. Brush mixture on chicken and season with pepper, to taste. Cover and soak in marinade for 3 hours. Season chicken with salt, place in a baking dish, cover with foil and bake for 30 minutes. Increase the oven temperature to 450 degrees. Drizzle the vinegar over the chicken. Bake uncovered, until chicken is browned for 10 minutes.


Tips: Keep track of your condiments, garnishes and veggies so that your total daily food intake stays compliant with the weight loss phase of the program.
