South of the Border Chicken Soup


  • 5 oz Chicken (breast, cooked)
  • 1 Bouillon (cube, chicken)
  • 1 c Water
  • 1⁄2 c Tomato (stewed, diced)
  • 1⁄4 c Green Pepper
  • 1 t Onion (diced)
  • 1 clv Garlic (minced)
  • 1⁄2 t Chili Powder
  • 1⁄4 t Cumin (ground)
  • 1 ds pepper


Bake chicken and cut into cubes; set aside. In a large pan, combine water, bouillon cube, diced tomatoes, onion, green pepper and onion. Bring to a boil. Add chicken, reduce heat, cover and simmer for 10 minutes. Add all the remaining ingredients except the cilantro. Pour soup into a bowl.
