Turkey Meatballs with Pine Nuts


  • 6 oz Ground Turkey
  • 1⁄4 oz Pine Nuts (lightly toasted in skillet)
  • 6 Olives (chopped)
  • 1 t Cumin (ground)
  • 1⁄2 t Fennel Seeds (lightly toasted)
  • 1 c Mustard Greens (chopped)
  • 1⁄2 c Onion (chopped)
  • 1⁄2 c Red Pepper (bell, chopped)


Mix the olives, cumin and fennel into the turkey. Shape into walnut-sized meatballs and roll in the pine nuts to coat. Place on a baking sheet and bake at 350 for 30 minutes. Meanwhile, cook the mustard greens, onion and peppers in a pot with a splash of vinegar over medium heat until tender. Serve the meatballs on top of the veggies and greens.


Tips: Keep track of your condiments, garnishes and veggies so that your total daily food intake stays compliant with the weight loss phase of the program.
