Crock Pot Chicken & Chilies


  • 2 lb Chicken (Fresh or frozen, boneless and skinless)
  • 1 cn Herdez Green Chile Salsa (small can)


Place fresh or frozen chicken in crockpot. Pour can of Herdez green chile salsa over top (enought to cover the chicken). This recipe is easily doubled or tripled- basically as much chicken as you need and add enough salsa to cover. Remember that 8 oz of chicken will cook down to about a 6 oz. portion. If you use another salsa, make sure it is low carb/sugar.

Cook all day on low, but one hour before serving shred the chicken with two forks and stir up. Put the lid back on and let it cook one hour before serving. Chicken will be very tender and will shred easily.


This is great on a bed of 1 cup spinach leave and 1/2 cup tomatoes for a complete lean and green. Add a couple of olives for your fat serving.
