Mixed Vegetables in Marinade


  • 1 Cucumber (Large, thinly sliced)
  • 1 Red Pepper (Medium bell, cut into 1/2 inch strips)
  • 1 Green Pepper (Medium bell, thinly sliced)
  • 1⁄2 c Balsamic Vinegar
  • 1 t Olive Oil
  • 4 pk Sugar Substitute (like Splenda)
  • Salt and Pepper (to taste)


Combine vinegar, oil and sweetener with 1 cp of water. Place cut vegetables in a bowl, coat with the marinade, cover and let sit overnight. Season with salt and pepper, to taste.
