- 1 Cucumber (Large, thinly sliced)
- 1 Red Pepper (Medium bell, cut into 1/2 inch strips)
- 1 Green Pepper (Medium bell, thinly sliced)
- 1⁄2 c Balsamic Vinegar
- 1 t Olive Oil
- 4 pk Sugar Substitute (like Splenda)
- Salt and Pepper (to taste)
Combine vinegar, oil and sweetener with 1 cp of water. Place cut vegetables in a bowl, coat with the marinade, cover and let sit overnight. Season with salt and pepper, to taste.
