- 2 c Zucchini (grated)
- 2 T Onion (grated)
- 4 Eggs (beaten slightly)
- Salt and Pepper (to taste, also Onion Powder and/or Garlic Powder (optional))
Heat canola oil or butter flavored Pam in a skillet. Mix all ingredients in medium sized bowl and drop by heaping tablespoons in hot skillet. When brown on one side, turn and cook the other side. Stack on a plate and keep in warm oven until whole batch is done. You can top these with butter spray and maybe a little salt.
