Huevos Rancheros


  • 1 cn Diced Tomatoes (15 oz)
  • 1 cn Tomato Sauce (3 oz)
  • 1 t Garlic (minced)
  • 1 T Chili Powder
  • 1⁄3 c Onion (chopped)
  • 1⁄3 c Red Pepper (bell, chopped)
  • 2 Eggs


Mix all ingredients except eggs in sauce pan. Cook on med-high heat for 30 minutes. In a nonstick skillet, “fry” two eggs. Top the eggs with the chili before serving.

Serves 1
