- 2 Eggs (Hard-boiled, diced)
- 1⁄2 c Mushrooms (White, sliced)
- 1⁄4 c Radish (sliced)
- 3⁄4 c Spinach (raw)
- 1 T Olive Oil and Vinegar dressing
Toss the spinach leaves with the olive oil and vinegar dressing. Place the dressed spinach on a plate and top with the eggs, mushrooms and radishes.
