Here’s the recipe:
-slice zucchinis in half and scoop out seeds.
-mist some olive oil on top and then sprinkle some garlic, pepper & basil on top.
-add toppings (sliced tomatoes for me)
-bake for 30 mins at 400 degrees
-remove from oven, add meat balls (optional) and sprinkle some Parmesan on top
-cook for 5 more minutes
I used 2 small zucchinis and a sliced tomato (weighed) to equal my greens (minus some frozen spinach I used in my soup at lunch). I made up some ground turkey meatballs and added them towards the end of baking. Very filling! Now I’m thinking of what other variations I can do next time!
