cinnamon zucchini tart


  • 1 oatmeal (any will work, maple or apple cinnamon might be best)
  • 1/2 tsp baking powder
  • 1/2 cup sliced zucchini
  • 1 splenda
  • cinnamon, nutmeg

Slice 1/2 cup zucchini and cook in a little water until soft. Strain and add 1 splenda, cinnamon, nutmeg, and a tsp of maple or apple oatmeal with 1/4 tsp of water.


The crust uses the rest of the oatmeal with 1/2 tsp baking powder and enough water to make it a cookie dough consistency. Press oatmeal into a sprayed mini tart pan and bake at 350 for 15 min. Add zucchini and sprinkle a little cinnamon on top and bake for 5 min. The cooked zucchini has a similar texture to soft baked apples. Makes 1 meal and 1 ‘green’ serving.
