“Stick to your Ribs” Crockpot Chili

Ingredients

  • 2 lb Ground Beef (lean)
  • 1 t Garlic (minced, about 1 large clove, fresh)
  • 1 T Red Pepper (flakes)
  • 1 cn Diced Tomatoes (14.5 oz, with green chiles)
  • 1 cn Tomato Sauce (15 oz, no sugar added)
  • 1 T Cayenne (or to taste)
  • 1 T Onion Powder
  • 1 t Paprika
  • 1⁄8 t Ground Cinnamon
  • 1⁄8 t nutmeg

Instructions

Brown ground beef with the garlic and red pepper flakes; drain thoroughly. Combine the browned meat/spices with all the remaining ingredients Place mixture in a crockpot and cook on high 3-4 hours or low 6-8 hours. Serve hot, garnished with dollops of sour cream and sprinkles of cheddar cheese, if desired. Freezes well for a quick lunch or snack. 5 carbs per serving.
